Judith “Judy” Weiskopf,
67, Minot, died peacefully
in her home Monday,
June 7, 2021 with family
by her side.
Judy was born No-
vember 1, 1953 in Minot,
North Dakota, the
daughter of Arnold and
Betty (Rothenberger)
Johnson. She was raised
on a farm in rural Parshall
and graduated from
Parshall High School in
1971. Many sweet and
joyful memories were
made with her siblings
and dear friends as she
grew up. After graduation,
she lived in Minneapolis,
attended Business Col-
lege, and achieved her
certification as a flight at-
tendant.
Judy returned to Minot
and worked as a waitress
at the Capri Cafe. Soon
after, a certain gentleman
would come in every
morning for breakfast be-
fore hitting the road on
his daily trucking route,
and that is how she met
the love of her life, James
Weiskopf. On a first date,
Judy rode on the
handlebars of Jim’s bicy-
cle and she loved to cheer
him on at the Nodak
Speedway, often shining
up his car before the
races. They were married
on December 28, 1973.
They lived in Minot for
a short time before mak-
ing their home near rural
Burlington in 1976. Judy
was employed at the
Speedway Restaurant for
27 years, followed by
Simonson’s, until a diag-
nosis of Non-Hodgkin’s
lymphoma forced her re-
tirement. Her greatest and
most fulfilling joy in life
was being a Mom and
nurturing her two chil-
dren, Bryan and Dana. Jim
and Judy worked side by
side while raising their
family and creating a lov-
ing home. They had many
different animals they
cared for and she was a
constant support to Jim
and his trucking/salvage
business. They were only
separated when Jim sadly
passed away on April 8,
2020.
She was an avid gar-
dener who was often
found outside, tending to
her beautiful flower gar-
dens and enjoying the na-
ture around her. She was
well known for her love of
baking, cooking and can-
ning; lucky visitors were
often sent home with a
plate of baked goods made
with love. She also loved
to read and there was
rarely a night you would
not find Jim and Judy en-
joying each other’s com-
pany by simply reading
together as they unwound
from their days. The sim-
plicity of life was what
made their love strong
and whole.
Judy had attended
Peace Lutheran Church in
Burlington.
Her loving family in-
cludes, children, Bryan
Weiskopf of Minot and
Dana Weiskopf (Aaron
Kirkeby) of Kennedy, MN;
siblings, Jim (Mary) John-
son, West Pine Ridge,
Manitoba, Ben (Bonnie)
Johnson, Oklahoma City,
OK, Jean (Terry) Kolden,
Roseglen, ND, Andy John-
son, Oklahoma City, OK
and brother-in-law Bruce
Simonson, Beverly Hills,
FL; Father, Arnold John-
son of Garrison; several
nieces, nephews and
cousins; along with many
friends and neighbors.
Judy was preceded in
death by her husband,
Jim, mother, Betty, her
sister, Janet Wherely and
brother-in-law, Charles
(Mary) Weiskopf.
Celebration of Life ser-
vice: Tuesday, June 15,
2021 at 11:00 a.m. in
Peace Lutheran Church,
