Evelyn (Evie) Edith Pryor (nee Aplass), 80, of Denver, Colorado, passed away peacefully on Saturday, October 11, 2025, in Rochester, Minnesota.

Born on August 31, 1945, in Minot, North Dakota, Evelyn (Evie) was the cherished daughter of Ludvica (Louise) Aplass (née Schmidt) and Adolph Aplass. She was the youngest of ten siblings (seven of whom survived into adulthood) and grew up on a farm near Benedict, ND, where she learned the values of hard work, resilience, and generosity – qualities that would define her life.

Evie graduated from Minot High School in 1963 and pursued her calling in healthcare, becoming a registered nurse through the Trinity School of Nursing in Minot in 1966. She later advanced to become a nurse practitioner serving in the pioneering coronary care unit at Trinity Hospital. She obtained her Bachelor of Science degree in 1980 from Metropolitan State University.

Evie married Robert Pryor in 1970 and they later divorced. In 1983, she married Arnold (Arnie) Rundiks and they made their home in Denver where they co-owned and operated an advertising delivery agency called Road Runner Ad Delivery, a business that was more than a livelihood – it was a lifeline for many. Each day, they provided work and meals to individuals experiencing homelessness and hardship, embodying Evie’s belief that dignity and kindness should be extended to all. They eventually closed the business when digital advertising became more prevalent, and Evie went back to her nursing career until she retired.

Evie was a radiant soul known for her exuberance, sense of humor, intelligence, curiosity and kindness. She thrived in community, whether playing bridge, pool, darts, or bingo; cooking up something delicious; or doting on her beloved cats. She touched many lives with her humor, friendship, service to others, and generosity.

She is survived by her brother Allen (Linda) and sister Betty, and sister-in-law Eydie Hauf, as well as three step-daughters, Erika, Krista and Marnie Rundiks; many nieces and nephews, great- nieces and nephews, friends, neighbors, bridge players, and her dear cat Jules Verne; and was preceded in death by her half siblings and their spouses Lena (Hauf) and John Belew, Robert and LouAnn Hauf, Adolf (Billy) and Wanda Hauf, and Emil (Bennie) Hauf, half-siblings Frederick, Alvin, Edward (who all died in childhood), a half-niece Vicki Francis, and half-nephew Dennis Hauf.

Evie’s final act of generosity was the donation of her body to the Mayo Clinic College of Medicine, ensuring that her legacy of healing and education continues beyond her lifetime. A memorial service will be held in North Dakota at a later date. In lieu of flowers, the family requests donations be made to Humane Colorado (fka Denver Dumb Friends League) honoring Evie’s lifelong love for animals.

Evie will be deeply missed, lovingly remembered, and forever celebrated.
