Today is National Fajita Day. It has also been two years since Casa Jalisco opened in Minot.

Owners Ivette and Caesar Gonzalez and son Adrian Lopez and his family started the restaurant after coming up with the name that pays homage to the state of Jalisco in Mexico, where the Gonzalezs are from. Lopez said his family has lived in Minot since 2013.

Jalisco, Mexico, is the birth place of Mariachi and Tequila and home to one of Mexico’s premiere beach vacation destinations, Puerto Vallarta. While the fajita is traditional to Tex-Mex cuisine, Casa Jalisco offers the Jalisco Fajita, which combines steak, shrimp and chicken.

Minot has been good to Casa Jalisco and they are thankful, Lopez said. It gets crowded, and Lopez said the plan is to move or expand, though they are just in the planning stages and have not started looking for a new building yet.

The restaurant is located at 3700 E. Burdick Expressway.
