Minot students take part in culinary arts contest

Minot High School-Magic City Campus culinary Arts FCCLA members competed Tuesday in the State FCCLA Culinary Arts Contest at the Burdick Job Corps Center.
At the state contest, students prepared shaved fennel and pear salad with Parmesan, herbed apple glazed chicken, spiced brussels sprouts, mashed potatoes and butternut squash with brown butter, and tiramisu sabayon parfait. Students were judged on knifing skills, poaching, tempering hot li-quids with egg, saute, emulsions, plate presentation, poultry fabrication, vegetable and starch cooking methods, and serving all courses and components at the desired temperatures.
Students competed in teams of three. Minot High School students competing were Schuylar Dhuyvetter, Kirsch Rosel, Karissa Rasmussen, Casey Erickson, Christopher Bachar, Carly Olstad, Brianna Balster, and Karn Lamon. Job Corps students included Michael Sundquist, Sharia Dixon, Clarence Belgarde and Sage McCrea. Judges for the event were Chef Peter Ochsner, Linda Tohm, and Carol Schmidt.
The results from the contest will be announced on April 20 in Bismarck at the State FCCLA conference. Paulette Meland is the culinary arts program instructor at Burdick Job Corps and Bonnie Martin and Mary-Beth Gross are co-FCCLA advisers at Magic City Campus.
